2 cusp all-purpose flour
1 tsp salt
1 tsp baking soda
3 large eggs
2 cups buttermilk
filling of your choice
powdered sugar
Mix flour, salt and baking soda. Separate the eggs, set the yolks aside. Beat the egg whites until light forming soft peaks. Add the egg yolks and the buttermilk to the flour mixture and stir until combined. Gently fold the egg whites into the batter. Grease your AEbleskiver pan and heat the pan at medium temperature. When hot, fill each cup one-third full with batter. Add optional small amount of filling to each, then cover with an additional one-third batter. Cook for a minute or two until batter bubbles at edges before turning (Danish cooks use a long knitting needle, but a fork or skewer will work). Cook for another minute or until done. Remove to a plate and sprinkle with powdered sugar. Serve warm.
