      1 large egg beaten
      1 tbsp onion, miced/chopped
      20 40g (1/4 – 1 1/2 oz) Oatmeal
      2-3 tbsp vegetable oil

      Pre-soak the oats for a few hours in water. Gently cook the salmon in a lightly greased pan until it is cooked through but still firm. Allow it to cool, then put salmon in a dish and break it into small flakes with a fork. Chop up onion and beat an egg adding it to your salmon flakes. Add the pre-soaked gluey oatmeal in portions, mixing with your hands and adding more oats until ingredients hold firm. Make the mixture into about 2 inch patties. Heat oil in a frying pan and gently brown patties on both sides of the low heat, turning carefully as they can break up easily. Remove and let coo/drain on a kitchen paper towel while you cook the next batch. Serve with watercress or seasonal vegetables.
